Green Cardamom Pods

Green cardamom pods have a strong, sweet flavour with a hint of citrus and mint. Cardamom is an important spice in Indian, North African and Middle Eastern stews, and in many spice blends, from curries to chai masala. The seeds can be cracked or ground for use in cooking, or the whole pods can be added to the pot and removed before serving. Two or three pods will suffice.

Suggested use:

Use in curries, stews and pilau rice. Add two crushed pods to black coffee.
