The process in which this ingredient is made, is through the natural fermentation of sugar by a bacteria called Xanthomonas campestris. The end result does not contain this bacteria, but rather produces a microbial polysaccharide, which can then be used to thicken and stabilise food items – similar results to that of the effects of gelatine.
